Slicing knife inspired by the Japanese Sujihiki knife.

This is a perfect slicing knife, sharp with a thin edge.

The steel is Elmax from the Swedish company Uddeholm

Weight: 190g

Length overall: 410mm

Balance point: 5mm in front of the logo

Blade

The blade has convex grind with a very thin edge and is tapered from the bolster to the tip.

The spine and choil has been rounded to make the knife comfortable to use with a pinch grip.

The finish on my Elmax blades are not as smooth as on other steels even if it has been finished to the sam grit size. This is because Elmax if extremely wear resistant.

Steel: Elmax

Elmax is a powder metallurgy stainless steel created by Bohler-Uddenholm. It is corrosive resistant due to its high Chromium percentage. It also has excellent edge holding capabilities. It is a fairly easy steel to sharpen and it becomes razor sharp due to the powder metallurgy process and the limited impurities.

Heat treatment: The blade has been differentially heat treated inhouse in a PID controlled furnace at 1100°C and quenched between thick aluminium plates. This is followed by freezing the blade at -79°C for an hour. Finally it is tempered in a PID controlled oven to reach the final hardness.

Hardness: 61 HRC
