You can add a BYSoMMER leather sheath to this knife for 50€

Lightweight and fairly large Gyuto in high tech stainless powder metallurgy steel. The front half has been ground very thin <0.1 and the area near the heel has more meat to it.

The steel is Elmax from the Swedish company Uddeholm.


Weight: 210g

Length overall: 365mm

Balance point: Under the X of the logo.

Blade

The blade has a mostly flat grind, but transitions in to convex at the higher part of the blade. It is tapered from the bolster to the tip.

The spine and choil has been rounded to make the knife comfortable to use with a pinch grip.

This blade is very thin behind the edge, <0.1mm just over the secondary bevel. The thickness is around 0.4mm 10mm from the tip.


Steel: Elmax

Elmax is a powder metallurgy stainless steel created by Bohler-Uddenholm. It is corrosive resistant due to its high Chromium percentage. It also has excellent edge holding capabilities. It is a fairly easy steel to sharpen and it becomes razor sharp due to the powder metallurgy process and the limited impurities.



Heat treatment: The blade has been differentially heat treated inhouse in a PID controlled furnace at 1100°C and quenched between thick aluminium plates. Finally it is tempered in a PID controlled oven to the final hardness.


Hardness measured: 61 HRC

Height at heel: 56mm

Cutting edge length: 236mm

Thickness at

  • Spine at bolster: 2.4mm

  • Spine halfway: 1.8mm

  • 1 cm from the tip: 0.3mm


Handle

Material: Stabilized Fiddleback Tasmanian Blackwood

Bolster and spacers: Stainless 303 bolster pinned to the blade with 303 pins, G10 and stainless spacers. Stainless 6mm 304 handle pin.
Treatment: The handle is treated with Danish Oil
