European style chef knife. If you only had one knife this is my best suggestion for what it should be. It is quite sturdy, has a stainless blade and a good size for most people.

Weight: 223g

Length overall: 340mm

Balance point: Just before the DENMARK of the logo, 13mm in front of the bolster.

Blade

The blade has a convex grind and is moderately tapered from the bolster to the tip.

The spine and choil has been rounded to make the knife comfortable to use with a pinch grip.

Steel: RWL-34
This is a powder metallurgy steel made specially for knives by Damasteel in Sweden. It has very high strength and toughness combined with extreme edge sharpness that is easy to maintain.
It has a reasonably good corrosion resistance, meaning it is stainless for most normal applications.

Heat treatment: The blade has been heat treated inhouse in a PID controlled furnace at 1050°C and quenched between aluminium plates. This is followed by a sub zero quench at -79°C and finally tempered in a PID controlled oven to the final hardness.

Hardness: 64 HRC

Height at heel: 48.5mm

  • Spine at bolster: 2.4mm

  • Spine halfway: 2.3mm

  • 1 cm from the tip: 0.7mm

Handle

Material: Arizona Ironwood.
This is one of the hardest woods in the world. It is very durable and one of the most valued woods for knife handles.

Bolster and spacers: Stainless 303 bolster pinned to the blade with 303 pins, vulkan fiber and stainless spacers.

Treatment: The handle is treated with Danish Oil
